INGREDIENTS:
FOR DOUGH:
• 4 cups plain flour
• 1 tsp. salt
• 1 tbsp. active dry yeast
• 1 tbsp. olive oil
• 2 cups milk
CHANA FILLING:
• 2 tbsp. oil
• 250gm mutton mince
• 1 tbsp. ginger (chopped)
• 1 tbsp. garlic (chopped)
• 1 tbsp. green chillies chopped
• 1 tsp. red chilli powder
• 1 tbsp. garam masala powder
• 1 tsp. salt
• 1 tsp. turmeric powder
• 125gm boiled chanay ki dal (split chickpeas)
• 125gm boiled potatoes
• 1/4 cup mint leaves (chopped)
• 1/4 cup coriander leaves (chopped)
PREPARATION :
PREPARE DOUGH:
• In a bowl add all the dry ingredients for dough and mix.
• Add oil, make crumbles, Now add milk and knead to form a soft dough. Cover & Let rest for 1 hour.
PREPARE FILLING:
• Take 2 tbsp. oil in a pan and add other ingredients one after the other in the same sequence as in ingredients' list and cook for 10-15 minutes.
PREPARE CHANA PURI:
• Make small lemon sized balls of chana filling.
• Roll the dough about 0.5cm thick and cut out equal circles.
• Wrap chana filling balls into these circles to make balls.
• Deep fry over medium flame until golden brown.
